FLAKY PASTRY
Ingredients:
- Maida- 180gms (white flour)
- Salt - 1tsp
- Cold butter - 130gms
- Squeeze of Lemon juice
- Icy water
Recipe Direction:
- Sift the flour and salt into a large bowl and place in the refrigerator or freezer to chill thoroughly about half an hour.The colder the ingredients are for this pastry, the better.
- Grate the butter into the flour, dipping it in flour if it becomes too sticky to grate.
- Add a squeeze of lemon juice, then, mixing with a fork, stir in enough icy water to make a lumpy dough that just holds together and leaves the sides of the bowl clean.
- Gather the dough up into a ball, wrap it in clingfilm and chill for 45 minutes.
- Preheat the oven to 200°C/ 400°F
- Roll the pastry out thinly on a lightly floured board and use as required.
