 FLAKY PASTRY

 


 Ingredients:

  • Maida- 180gms (white flour)
  • Salt - 1tsp
  • Cold butter - 130gms
  • Squeeze of Lemon juice 
  • Icy water

Recipe Direction:

  • Sift the flour and salt into a large bowl and place in the refrigerator or freezer to chill thoroughly about half an hour.The colder the  ingredients are for this pastry, the better. 
  • Grate the butter into the flour, dipping it in flour if it becomes too sticky to grate.
  • Add a squeeze of lemon juice, then, mixing with a fork, stir in enough icy water to make a lumpy dough that just holds together and leaves the sides of the bowl clean.
  • Gather the dough up into a ball, wrap it in clingfilm and chill for 45 minutes.
  • Preheat the oven to 200°C/ 400°F 
  • Roll the pastry out thinly on a lightly floured board and use as required.
