FLAKY PASTRY
Ingredients:
Maida- 180gms (white flour)
Salt - 1tsp
Cold butter - 130gms
Squeeze of Lemon juice
Icy water
Recipe Direction:
Sift the flour and salt into a large bowl and place in the refrigerator or freezer to chill thoroughly about half an hour.The colder the ingredients are for this pastry, the better.
Grate the butter into the flour, dipping it in flour if it becomes too sticky to grate.
Add a squeeze of lemon juice, then, mixing with a fork, stir in enough icy water to make a lumpy dough that just holds together and leaves the sides of the bowl clean.
Gather the dough up into a ball, wrap it in clingfilm and chill for 45 minutes.
Preheat the oven to 200°C/ 400°F
Roll the pastry out thinly on a lightly floured board and use as required.
